Giant Blizzard Cookies!



We were all snowed in last weekend here at Cooler Kitchen Headquarters in NYC! We ventured out into the blizzard for about 15 minutes to take a few snaps of the street scene. Here’s what our street looked like…

 

Needless to say, we didn’t make it so far! We had all the provisions that we needed at home anyway, including a giant bag of Kirkland brand chocolate chips (we are a Costco household to the bone). Yup, it was time for some blizzard cookies.

 

We baked em giant, chewy and comforting using an ice cream scoop to portion out the dough. Pardon my manicure, but I had nowhere to be except at home with these cookies and Making a Murder on Netflix…


Milk, anyone? Too bad that actually was the one thing we forgot at the store. Oh well!
 
Giant Blizzard Cookies!

Ingredients
  • ½ cup butter, softened
  • ½ cup granulated sugar
  • ½ light brown sugar, packed
  • 2 large eggs
  • 1 tbsp vanilla extract
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 cups all-purpose flour
  • 2 cups semi-sweet chocolate chips
Instructions
  1. Preheat oven to 375 degrees. In a medium sized bowl, combine butter, sugar, and brown sugar with an electric mixer until smooth. Add the eggs and vanilla, and cream the ingredients together with the mixer on medium speed. Add the baking soda and salt, then slowly add the flour, mixing on low, until thoroughly blended. Fold in the chocolate chips with a spatula. Using an ice cream scoop or large spoon, drop cookie dough balls onto 2 large ungreased baking sheets so that they're evenly spread apart. Bake for 10-12 minutes until golden brown on the edges and the middle is just set. Let cool 10 minutes before serving. Makes about 15 large cookies.
