Roasted Green Beans and Garlic

Oh, the sweet simplicity of this classic vegetable combination. If you, or someone you love dearly, is a garlic lover, then this needs to be on the table at your very next meal. Trust me, just do it. And I mean tonight- beans and garlic are both outstandingly seasonal right now. Get to the market!

Roasted Green Beans and Garlic

Ingredients
  • 2 lbs French green beans, stems removed
  • 10 whole cloves of garlic (about a whole head, skins removed)
  • 3 tablespoons olive oil
  • Salt + Freshly cracked black pepper, to taste (use a nice coarse finishing salt, Kosher works great)
  • 8-10 sprigs fresh thyme
Instructions
  1. Preheat the oven to 425F. In a large bowl, toss together the green beans, garlic cloves and olive oil. Spread out the beans and garlic on a large baking sheet with sides that has been covered with tinfoil, season generously with salt and pepper, and top with the thyme sprigs. Roast in the oven for 12-15 minutes, giving the beans a good shake-up with a spoon or spatula at the midway point. Discard the thyme sprigs and serve immediately, or keep at room temperature for up to a few hours and re-heat.
