Will Wake for Oatmeal

I heart Well* and oatmeal.

Time was, the only thing that could get me out of bed in the morning was the thought of my coffee. Every morning, I require 3-4 cups of black, black joe which I have been known to guzzle. Now that I work at an Elementary School and wake up a lot earlier, I foud that I needed a little something extra to get me out of bed. These days, I go to bed and wake-up excited for my breakfast oatmeal!

A lot of people don’t like cooking in the morning, but by whipping up this simple breakfast my day begins with a sense of personal accomplishment. Ultimately, here’s the bottom line: oatmeal is cheap, healthy, and you can make it as exciting as you want your morning to be. Anything you might put as a topping on an ice cream sundae, you can add to your oatmeal! I use a Microplane grater and grate a fresh cinnamon stick directly into the oatmeal, which seriously ups the flavor ante. A lot of people grew-up with their mothers stirring sugar and butter into their oatmeal, but I’ve found that the agave adds flavor enough so that you won’t even miss the extra cream or sweetness (or fat, or calories). This recipe serves one, so pay heed to the suggested cooking directions on the side of your oats box in order to adjust water and oats for more servings.

Ingredients
  • 1½ cups water
  • Pinch of salt
  • ¾ cup old-fashioned whole grain rolled oats
  • ½ teaspoon raw agave sweetener, honey, or maple syrup
  • ¼ cup blueberries (or any fruit you like, chopped into small pieces)
  • ⅛ cup unsalted, raw walnut pieces (optional)
  • fresh ground cinnamon, to taste
Instructions
  1. In a small pot, bring the water and pinch of salt to a boil over high heat. When the water is boiling, turn the heat down to low and add the oats. Stir well, making sure that all of the oats are immersed in the water. Cook for 5 minutes, stirring every minute or so.
  2. When you see the oats start to bubble, add the blueberries and agave. When you add the fruit, it releases some of it’s own water as it cooks- keep stirring frequently for 2-3 minutes more until the water is gone. Off the heat, and stir in the walnuts and fresh ground cinnamon. Spoon into a bowl, have a great morning!
